What is the first thing that comes to mind when we mention Poljica? The Poljica princes, the Poljica Republic? Or perhaps soparnik?
That essentially simple dish, consisting of a little chard, onion and parsley between two thin layers of dough, which dates back to the time of the Ottomans, is a kind of gastronomic ambassador of Poljica.
On a field trip, our students visited the Radmilo family farm and Mrs. Nikolina Radmilo Pivčević, and got the chance to make soparnik themselves, which they then tasted (we believe it was excellent).
They then descended to Omiš, where they visited Hotel Plaža and Hotel Plaža Duće, where, through an organized tour and conversation with the hotel managers, they learned all about the advantages and responsibilities of the occupation they are training for.
