A Perspective of Provence on the Plates of the Wallner School

Viktorija Bašić graduated last year with excellent results and is currently continuing her string of great achievements in the culinary profession. Viktorija completed secondary school in the class of Prof. Hrgović, to whom, throughout her schooling, she was not only a source of pride that he showed off at school competitions, but also a true sous-chef in every lesson. She helped with the cooking preparation, had a wealth of ideas and the courage for both savory and sweet dishes. She came to the school like an uncut diamond, with no prior knowledge but head over heels in love with cooking. She directed her path to the top with a victory at the competition for young culinary talents, held as part of the Taste the Mediterranean festival. At the end of November 2023, she was named the most promising young chef, and the Mediterranean Women Chefs initiative awarded her a scholarship for professional development. Our Viktorija also took her school exams at the same time and worked diligently in Marseille with chef Michel Basaldella. She currently still works at the cult Split restaurant Bajamonti, and her dream is one day to open her own restaurant where she will prepare dishes of Dalmatian flavors, with native and fresh ingredients but with a modern twist that will allow her to showcase the styles and techniques she learned from the many chefs she had the chance to learn from.
For her younger colleagues, the participants of the Program, Viktorija demonstrated three dishes partly inspired by her stay in Provence. The students had the opportunity to make a pumpkin espuma-mousse, pork belly with sweet potato cream and glazed carrots, and a chocolate mousse in meringue baskets with a forest fruit coulis.
Viktorija is proof that dreams can be achieved through persistent work and perseverance, and the task of the Wallner school is to guide students so that those dreams become reality as soon as possible.
